Coriander–Mint Lemonade

Ingredients

  • 1 small handful Mint (6–8 leaves)
  • ½ tsp Coriander seeds (lightly cracked)
  • 2 tbsp Lemon juice
  • 1½ tbsp Maple syrup
  • 6–8 tbsp Filtered water
  • Ice

Directions

  1. Crack the coriander seeds by pressing lightly with the flat of a knife; do not crush into powder.
  2. Muddle mint and coriander in a sturdy glass 6–8 times to release oils.
  3. Add lemon juice and maple syrup; stir 5–10 seconds to dissolve.
  4. Fill glass with ice and filtered water; stir 15 seconds until cold.
  5. Taste and adjust: more lemon for brightness, more maple for smoothness.
  6. Garnish with a mint sprig by smacking it between your palms.
